These super healthy chocolate chip cookies are made out of wholesome ingredients like chickpea fava bean flour, banana and egg. Soft, sweet yet healthy enough to enjoy for breakfast!
There are many types of healthy flours available at grocery stores. I like to mix them with all-purpose flour to boost the nutrition of baked goods. Recently, I’ve been experimenting with chickpea fava bean flour.
Chickpeas are a type of legume with many health benefits:
- Rich in fiber and protein
- 1 cup of chickpeas has 14g of protein and 12g of fiber
- Fiber helps you feel full-longer and may help with weight management
- Full of key vitamins and minerals such as iron, calcium, potassium, B vitamins, magnesium
- Antioxidants such as selenium and beta carotene to fight free radicals
Fava beans are also a type of legume with many health benefits:
- Rich in fiber and protein
- 1 cup of fava beans has 13g of protein and 8g of fiber
- High concentrations of thiamin, vitamin K, vitamin B-6, potassium, copper, selenium, zinc and magnesium
- Beneficial for bone health, may help lower cholesterol, may help improve high blood pressure
What do they taste like?
There is no oil in this recipe to cut down on fats and extra calories. So the texture is not like a typical cookie. They are soft and slightly sweet, much like the texture of a madeleine or muffin my family says.
They’re super easy and fast to make. The kids enjoy them for breakfast and school snacks.
Healthy baking tip:
I spoon the dough on the baking tray into cookie shapes. Then I add just 3 chocolate chips for each cookie and space them out nicely. I find when I mix chocolate chips into the dough and then spoon it on the baking sheet, sometimes I end up with a lot of chocolate chips in one cookie and in general too many.

Healthy Chocolate Chip Cookies with Chickpea Fava Bean Flour
Ingredients
- 1/2 cup chickpea fava bean flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 ripe banana
- 1 egg
- 2 tablespoons agave syrup
- 1/2 teaspoon vanilla extract
- 18 chocolate chips
Instructions
- Ina medium-sized bowl, whisk chickpea fava bean flour, all-purpose flour, baking soda, salt and cinnamon together.
- In another bowl, mash banana then add egg, agave syrup, vanilla extract and whisk together.
- Combine wet and dry ingredients in one bowl and whisk.
- Preheat oven to 350°F (177°C).
- Line baking trays with a silicone baking mat or parchment paper.
- Scoop approximately 1 1/2 tablespoon of cookie dough for each cookie on the baking mat. The dough will be quite liquidy and spread on the sheet.
- Add chocolate chips to each cookie. I like to add the chocolate chips in this step so that each cookie gets the same amount and they are spread out. I put 3per cookie, but if you like more chocolate go right ahead!
- Bake for 15 minutes until lightly browned.
- Store in an airtight container for 3 to 4 days.
