I’m always looking for ways to get my kids to eat more veggies.  If I get a chance to hide them in a dessert without them knowing, I definitely jump at the chance.  These healthy fudgsicles are made from just a handful of wholesome ingredients – pumpkin, banana, cacao powder and condensed milk.  Well, I guess you can’t really call condensed milk wholesome.  But I figure a little condensed milk wouldn’t hurt since its mostly pumpkin and banana, lol.

I can’t get my daughters to eat roasted pumpkin or pumpkin soup yet, but they love these fudgesicles.  It’s nice when there’s enthusiasm rather than complaints regarding eating veggies!

What are the health benefits of pumpkin?

Freeze time 4 hours
Total Time 4 hours 25 minutes

Servings 6 popsicles

Ingredients
  

  • 2 very ripe bananas
  • 2 cups pumpkin steamed or canned pumpkin puree
  • 4 tablespoons cacao powder
  • 6 tablespoons condensed milk

Instructions
 

  • Dice pumpkin and steam until soft. To save time, you can use canned pumpkin puree.
  • In the blender, add all ingredients and blend until smooth.
  • Taste the mixture and see if it’s the right sweetness for you. Add more condensed milk if you would like it sweeter. Note that the fudgesicles will taste slightly less sweet after freezing.
  • Pour in popsicle molds and freeze.
  • Optional: when you serve the fudgesicles you can drizzle them with condensed milk and toasted coconut flakes.
