Hi and welcome!

I’m happy you’re here.  My name is Lily, mother of two spunky little girls who are 6 and 8.

What kind of recipes will you find here?

Everyday meals and snacks that have been “hacked” to be a little bit healthier.  I don’t prescribe to any particular diet, but focus on eating more whole foods and being well-balanced.   In the recipes, you’ll see healthy ingredients added or substituted for some not as healthy ones, boosting the nutrition of everyday meals the whole family can enjoy.

How did it all start?

It all started when my eldest daughter was 2 years old.  She was once a baby and then a toddler who ate everything under the sun.  All fruits, vegetables, meats, dairy, grains were her friends, waiting for her tastebuds to explore.  I felt so fortunate to having a child who ate everything.  But all of a sudden, she discovered she liked the taste of meat, dairy and grains the best.  Then one by one to my horror, she stopped eating almost all vegetables and fruits!

Desperate to get her to eat well-balanced meals, I started to think of ways to “camouflage” the fruits and veggies in her foods.  That was the beginning of fresh fruit popsicles, chicken nuggets with mushrooms and sweet potato waffles.

Often my family doesn’t even notice the healthy ingredients they’re eating.  I always like to ask my hubby “what do you think is in this lasagna?”  And respond with something to the likes of “haha!  Did you know there was also spinach and tofu?”  To my children enjoying freshly baked chocolate cookies, I would say “did you know you just ate zucchini????”

So I started this blog, Healthy Cooking Hacks, to share the recipe hacks I made up over the years.  I hope you will enjoy these easy and healthy recipes!

Cheers!

Lily
