Chickpeas are a pantry staple of mine and often I have leftover mashed potatoes from dinner.  This makes it super easy and fast to throw together these healthy chickpea fritters.   The tahini sauce comes together in just minutes as well.  Sometimes I have them as a main with a side salad or as an appetizer.

Chickpeas are a type of legume with many health benefits:

  • Rich in fiber and protein – 1 cup of chickpeas has 14g of protein and 12g of fiber
  • Fiber helps you feel full longer and may help with weight management
  • Full of key vitamins and minerals such as iron, calcium, potassium, B vitamins, magnesium
  • Antioxidants such as selenium and beta carotene to fight free radicals

The tahini sauce is made with tahini, lemon, garlic and nutritional yeast to give it an extra boost of nutrition.  Nutritional yeast is a popular ingredient in vegan cooking these days.  It gives the sauce a slight cheesy, nutty, flavour while being a great source of protein, B vitamins and minerals.  Nutritional yeast also contains powerful antioxidants and is said to boost immunity. 

If you have no time for the tahini sauce or your family doesn’t like it, simply serve with ketchup or just as is.

Best part is, no one will know they just ate chickpeas!

Ingredients
  

Chickpea fritter

  • 1 can (400g) chickpeas
  • 1 cup potatoes, cooked
  • 1/4 cup parmesan cheese
  • 1 tablespoon cilantro, chopped
  • 1/2 cup corn
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Tahini sauce

  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Pinch salt
  • Pinch black pepper
  • 1/2 tablespoon nutritional yeast
  • 4 tablespoon warm water, can add more for a more liquid consistency
  • Pinch Chiliflakes or chili powder, optional

Instructions
 

Chickpea fritter

  • Mash chickpeas and potatoes in a medium sized bowl.
    1 can (400g) chickpeas, 1 cup potatoes, cooked
  • Add parmesan cheese, cilantro, corn, salt and pepper.
    1/4 cup parmesan cheese, 1 tablespoon cilantro, chopped, 1/2 cup corn, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  • Shape into patties and brush olive oil on top.
  • Gently place oiled side on the air fryer and brush oil on the top side.
  • Cook at 365°F (185°C) for 10 mins.

Tahini sauce

  • Add all ingredients in a small bowl and whisk.
    1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 tablespoon tahini, 1 tablespoon lemon juice, 1 clove garlic, minced, Pinch salt, Pinch black pepper, 1/2 tablespoon nutritional yeast, 4 tablespoon warm water, can add more for a more liquid consistency, Pinch Chiliflakes or chili powder, optional
  • Add more warm water if you prefer a more liquid consistency.
  • Taste and add more salt, lemon or pepper if needed.
