What you’ll need for this recipe

  • Tuna: I use canned tuna that’s in olive oil.  Tuna is a good source of protein and rich in omega-3 fatty acids.  Its also high in vitamin D which is essential for bone health.
  • Sundried tomato pesto:  Made from sundried tomatoes, garlic, cheese basil and white wine vinegar, its instant flavour!
  • Pasta: I like using fusilli because the ridges help the sauce get right in the pasta.  But this recipe works with any pasta you like.
  • Olives:  I used whole black olives and sliced them because that’s what was in my cupboard.  But if you buy the sliced ones, you can save even more time.
  • Garlic:  I love garlic so I always have to add extra! Plus its nice to get all the health benefits garlic has to offer.  I can help boost the immune system to reduce the severity of cold and flus, lower blood pressure and cholesterol and reduce the risk of heart disease.  So I always say you can never have too much garlic!
  • Seasonings: Salt and pepper to taste.  I also like to top it with some chili flakes, freshly grated parmesan cheese and basil or parsley (whatever you have in the fridge).

Ingredients
  

  • 250 g fusilli pasta or any pasta of choice
  • 2 cloves garlic minced
  • 1/4 cup jarred sundried tomato pesto
  • 1/2 cup of olives
  • 1 can 185g tuna
  • Salt and pepper to taste
  • Optional: chili flakes freshly grated parmesan and chopped fresh basil or parsley

Instructions
 

  • In a large pot of salted boiling water, cook fusilli until al dente.
    250 g fusilli pasta or any pasta of choice
  • While the pasta is cooking, sauté garlic in a pot with sundried tomato pesto, olives and tuna.
    2 cloves garlic, 1/4 cup jarred sundried tomato pesto, 1/2 cup of olives, 1 can
  • When the fusilli is ready, transfer it to the sauce. Reserve 1/2 cup of water that the pasta was cooked it and mix it with the sauce and fusilli. Cook while stirring for 1 minute. This will help the sauce get into the pasta.
  • Taste and add more pesto or salt and pepper if necessary. Some store bought pesto may already be salty enough.
    Salt and pepper to taste
  • Serve and top with chili flakes, freshly grated parmesan and chopped fresh basil or parsley. Enjoy!
