Homemade Everything Granola Bars

You’ll love these homemade everything granola bars.  They’re full of  a ton of wholesome and healthy ingredients like almonds, rolled oats, dates and also three different seeds – chia seeds, flax seeds and sunflower seeds!  Also, there’s no need to bake them so you can whip them up in a flash and just let them set in the fridge.

These everything granola bars are made with a variety of nuts, seeds and oats, hence the name everything granola bars.  They always say a varied diet is a more healthy diet, so I tried to fit in all kinds healthy ingredients in them. 

I especially put in a lot of different seeds because I don’t tend to eat them as often as nuts and oats.  So you can try substituting with some ingredients you don’t usually get in your diet.  For example if you eat almonds often, instead try adding a different nut that you eat less often.  Once its in that delicious mixture of dates, honey and peanut butter, you might not be able to stop eating them, like me!

What you’ll need to make these bars

  • Almonds: Full of healthy fats, protein, calcium, magnesium and vitamin E.
  • Dates: Naturally sweet and chewy.
  • Rolled oats: Rich in antioxidants and fiber for a healthy gut.
  • Flax seeds:  Packed with omega-3 fatty acids, fiber, protein and potassium.
  • Sunflower seeds: Incredibly high in vitamin E, selenium and healthy fats.
  • Chia seeds: Contains calcium, manganese, magnesium, selenium, copper, iron and phosphorus.  Also, high in fiber and healthy fats.
  • Salt: To balance the flavours.
  • Honey:  For sweetness and to help hold the bars together.
  • Peanut butter: Good source of protein and high in antioxidants.

I’ve experimented before with making no bake granola bars but sometimes I end up with granola because it doesn’t hold together.  But these really do!  Plus because they are so delicious and healthy, they make a great breakfast, snack or even dessert!

Ingredients
  

  • 3/4 cup almonds
  • 1 cup dates
  • 3/4 cup rolled oats
  • 1/4 cup flax seeds grounded
  • 1/4 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/8 tsp salt
  • 1/4 cup honey
  • 1/4 cup peanut butter

Instructions
 

  • Put almonds into the food processor and pulse until chopped into small pieces. Not a problem if some of it turns into almond flour. That will help the bars hold together better. Remove and put into a large bowl.
  • In a food processor, add dates and pulse until it forms a paste. Remove and put in a small pot.
  • In the large bowl with the almonds, add rolled oats, grounded flax seeds, sunflower seeds and chia seeds. Mix.
  • In the pot with the dates, add salt, honey and peanut butter. On low heat, warm up the ingredients for a few mins while stirring. Next, add it to the large bowl with all the other ingredients.
  • Mix with 2 spoons or use your hands. I found my hands worked better to really make sure the wet ingredients get incorporated with the dry ingredients.
  • Transfer to a 8″x8″ baking tray lined with parchment paper.
  • Pack the mixture down as much as you can. The more compact, the better the bars will hold together.
  • Chill in the refrigerator for 2 hours. Cut into 12 rectangular bars.
  • Store leftovers in the refrigerator for up to 7 days.
