Smoked Salmon Avocado Sushi Rice Bowl

Ever feel like making sushi rolls at home but don’t know how to roll them?  Here’s an easy solution that’s just as delicious!  This smoked salmon avocado sushi rice bowl is healthy, no fuss and only takes 10 mins of prep time.

When I eat out, sushi restaurants are always on the top of my list of good eats.  Sushi is delicious and I would say pretty healthy compared to a lot of other restaurant options.  But it can get expensive, especially with a whole family and sometimes I just want a budget option that I can make at home to enjoy more often.

So I came up with this easy and healthy smoked salmon avocado rice bowl.  I can’t find sushi grade fish at my regular grocery store, so once I tried making this with smoked salmon and I was surprised by how good it was!  The texture of smoked salmon is quite close to thinly sliced salmon sushi and you get the extra salt and smoky flavour.  Plus it has a long shelf life so you can keep it in the fridge for the days you need a no fuss quick meal.

Smoked salmon is incredible nutritious

  • Loaded with omega-3 fatty acids which can help reduce inflammation and protect against heart disease
  • Consuming more omega-3 fatty acids is also associated with maintaining brain health
  • Good source of essential vitamins and minerals such as calcium, iron, zinc, selenium, vitamin B12, A and E
  • Tends to be high in salt so enjoy in moderation

Avocados are a powerhouse of nutrients

  • Rich in monounsaturated fats (“good fats”) that help lower LDL cholesterol (“bad cholesterol”)
  • High in fiber to keep you feel satiated longer
  • Source of potassium, folate, vitamin C, E, B5, K, niacin
  • Sugar free! 
  • Good for the skin because vitamin C helps your body produce more collagen

How do I make smoked salmon avocado sushi rice bowl?

  1. Cook rice in rice cooker.
  2. Mix sushi vinegar with rice using the rice paddle.  Let it cool down to room temperature before adding the toppings, which should be just a few minutes.
  3. Slice avocados, smoked salmon and cucumber.
  4. Place on top of cooked rice.
  5. Pour as much soy sauce and wasabi over the bowl as you like.

Can I cook sushi rice without a rice cooker?

Yes, you can use an Instant pot if you have one.  Or a regular pot is fine as well. Put water and rice in the pot on high heat.  Once the water boils, reduce to a low temperature.   It should take around 20 mins.

Ingredients
  

  • 2 cups sushi rice Using the cup that comes with your rice cooker which is different than the cup size that you bake with. One of my rice cooker cups is approximately 1/2 a baking cup
  • 150 g of smoked salmon
  • 3 tablespoons sushi vinegar
  • 2 avocados
  • 1 cucumber
  • Soy sauce and wasabi to taste

Instructions
 

  • Rinse rice and add it to the rice cooker with 2 cups of water (same cup size as the cup that comes with your rice cooker). Or fill to the "2" line if your rice cooker has the indications.  
  • Mix sushi vinegar with rice using the rice paddle. Let it cool down to room temperature before adding the toppings, which should be a few mins.
  • Slice avocados, smoked salmon and cucumber.
  • Place on top of cooked rice.
  • Pour soy sauce and wasabi over the bowl. Enjoy!
