Healthy Chocolate Chip Cookies with Chickpea Fava Bean Flour

These super healthy chocolate chip cookies are made out of wholesome ingredients like chickpea fava bean flour, banana and egg.  Soft, sweet yet healthy enough to enjoy for breakfast!

Ingredients
  

  • 1/2 cup chickpea fava bean flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 ripe banana
  • 1 egg
  • 2 tablespoons agave syrup
  • 1/2 teaspoon vanilla extract
  • 18 chocolate chips

Instructions
 

  • Ina medium-sized bowl, whisk chickpea fava bean flour, all-purpose flour, baking soda, salt and cinnamon together.
  • In another bowl, mash banana then add egg, agave syrup, vanilla extract and whisk together.
  • Combine wet and dry ingredients in one bowl and whisk.
  • Preheat oven to 350°F (177°C).
  • Line baking trays with a silicone baking mat or parchment paper.
  • Scoop approximately 1 1/2 tablespoon of cookie dough for each cookie on the baking mat.  The dough will be quite liquidy and spread on the sheet.
  • Add chocolate chips to each cookie.  I like to add the chocolate chips in this step so that each cookie gets the same amount and they are spread out.  I put 3per cookie, but if you like more chocolate go right ahead!
  • Bake for 15 minutes until lightly browned.
  • Store in an airtight container for 3 to 4 days.
