Blueberry Oatmeal Bars

Chewy, soft and sweet, these baked blueberry oatmeal bars are made from wholesome ingredients but taste more like a yummy treat.  You’ll feel like you’re having dessert for breakfast!

Oatmeal is one of those breakfasts that are healthy, hearty and tasty.  Oatmeal is known to lower blood sugar levels, promote a healthy gut and lower cholesterol.   They are also full of antioxidants and fiber which makes you fuller longer so you’re not reaching for a mid-morning snack.  All in all, an incredibly healthy breakfast.  But would my kids eat it for breakfast?  Heck no.

Parents who have oatmeal eating kids, I look at you with envy.  I’ve tried different variations with my kids, but they just don’t fancy the porridge like consistency.  I’ll just have to disguise it somehow.  How about into a dessert-like bar?

Enter the baked blueberry steel cut oat squares.  This recipe is so easy, you just put everything into a blender, stir in some blueberries, bake and voilà!

I use the Blendtec, a high speed blender, to turn the steel cut oats into oat flour.  I pulse it until I see the consistency of flour.  If you don’t have a blender that can turn grains into flour, I recommend using rolled oats instead. 


What’s the difference between steel cut oats and rolled oats?

  • Steel cut oats are the least processed.  They are oat groats that have just been chopped into pieces using steel blades, hence the name steel cut oats.  They take longer to cook.  Usually around 20 to 25 minutes on the stove.
  • Rolled oats are also oat groats but they have been steamed and flattened to shorten the cooking process.  They usually take 5 to 10 minutes on the stove.
  • Steel cut oats are higher in fiber and protein.
  • Steel cut oats may have a lower glycemic index.  It takes the body longer to digest which may contribute to more stable blood sugar levels.

These baked blueberry oatmeal bars taste good reheated as well.  I usually make a big tray and then keep it in the fridge to eat throughout the week.  They make a chewy, soft and sweet snack as well in the afternoon. 

Best part is, no one will know they ate steel cut oats!

Ingredients
  

  • 1 cup steel cut oats
  • 3 bananas
  • 3 eggs
  • 3 tablespoons brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup blueberries

Instructions
 

  • Preheat oven to 375°C.
  • Ina high speed blender, pulse steel cut oats until flour-like consistency.
    1 cup steel cut oats
  • Add remaining ingredients and blend until smooth.
    3 bananas, 3 eggs, 3 tablespoons brown sugar, 1 1/2 teaspoons baking powder, 1 teaspoon salt, 1 cup blueberries
  • Grease a baking tray and pour the mixture in.
  • Sprinkle in a cup of blueberries.
  • Bake for 35 to 45 minutes until slightly brown on top and a toothpick comes out clean.
  • Cut into squares and store in an airtight container for 3 to 4 days.
