Easy Banana Oatmeal Mug Cakes

If you don’t enjoy oatmeal but want to enjoy the health benefits of it, here’s an easy and delicious way to eat oats – banana oatmeal mug cakes!  They’re made with oats and no flour but amazingly tastes like cake!

This recipe for healthy banana oatmeal mugs cakes is super easy to make.  I know there’s a lot of baked oats recipes, but there’s never enough time in the morning, especially on weekdays to wait for oats to bake.  So  I kept experimenting until I got the perfect, quick morning recipe to share with everyone. You can prepare it the night before and then simply microwave the mugs in the morning and you’ve got a yummy breakfast in just minutes!

Here’s what you’ll need to make banana oatmeal mug cake:

  • Rolled oats
  • Ripe banana
  • Oat milk
  • Egg
  • Baking powder
  • Cinnamon
  • Vanilla extract
  • Honey
  • Salt

How do you make banana oatmeal mug cakes?

  1. In a blender, pulse rolled oats into a flour-like consistency.
  2. Add remaining ingredients and blend until smooth. 
  3. Pour batter into 2 mugs.
  4. Microwave for 2.5 mins.  If the top looks like its not cooked yet, microwave for another 30 seconds.
  5. Top with fresh fruits and maple syrup if desired.  Enjoy!

The best part of these banana oatmeal mug cakes is that they are easily customizable by the mug.  You can personalize it for all the different tastes of each person in the family.  Also, if you’d like to have it as an afternoon pick me up or dessert, simply add a few chocolate chips and you’ve got an indulgent yet healthy treat!

Ingredients
  

  • 1 cup rolled oats
  • 1 ripe banana
  • 1/4 cup oat milk
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tablespoon honey
  • Pinch of salt

Instructions
 

  • In a blender, pulse rolled oats into a flour-like consistency.
  • Add remaining ingredients and blend until smooth.
  • Pour batter into 2 mugs. Batter can be made the night before and kept in the refrigerator.
  • Microwave for 2.5 mins. If the top looks like its not cooked yet, microwave for another 30 seconds.
  • Top with fresh fruits and maple syrup if desired. Enjoy!
