These cauliflower pancakes are light, fluffy and slightly sweetened with maple syrup. Not only are they made with one full cup of cauliflower, they are also made with yogurt, egg and whole wheat flour. So you get your veg, dairy, protein and whole grains all in one delicious pancake. Talk about a wholesome breakfast!
Do your kids’ lunch boxes come home with veggies untouched? With no one at school to nag them and say “eat your vegetables!”. My kids more than often come back with the veggies uneaten. Wouldn’t it be wonderful to get some veg in them before school starts during breakfast? In a way, to make up for the lost opportunity to eat veg during lunch?
The solution – a breakfast with hidden veggies like these pancakes with hidden cauliflower are a surefire way to get kids to eat some veg at breakfast. If you browse some of the breakfast recipes in the blog, you’ll see I’m an avid hider of veg in breakfast! I’ve made carrot quinoa waffles, pumpkin pie pancakes, sweet potato and flax seed waffles and pumpkin oatmeal waffles just to name a few. Its quite fun to see what veg I can hide without the family noticing. I’ll probably be doing this until I hear my kids say “can I have cauliflower for dinner mom?”. I think that’ll mean for eternity then!
It’s a bit more work to make because you have to steam the cauliflowers first. Then add them to the blender with yogurt and blend until smooth. The next step is to add all the other ingredients in the blender and blend until just combined. Because of the extra work, when I make these I double the recipe for a bigger batch which can be stored in the fridge and eaten during the week. Save time and work by cooking once and eating twice! Or make even more at the same time and store it in the freezer so you can cook once and eat thrice!
If you noticed in the picture, I made them various mini sizes between 1 and 2 inches. It’s a bit of a novelty for the kids to eat them mini size. My daughter said they’re like eating golden coins! They do take a bit of time and patience to make, so definitely for a day when you have some free time to do this for fun. Otherwise, regular sized pancakes with this recipe are just as delicious.

Mini Cauliflower Pancakes
Equipment
- High-powered blender
Ingredients
- 1 cup cauliflower chopped and steamed
- 1/2 cup yogurt
- 4 tablespoons milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3 tablespoons maple syrup
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup whole wheat flour
Instructions
- Chop cauliflower and steam until soft.
- In a high powered blender, blend cauliflower and yogurt until smooth.
- Add remaining ingredients in the blender and pulse just enough to combine.
- Let the batter rest for 10 minutes before cooking.
- Cook on medium heat on a non-stick pan or griddle. Brush pan lightly with olive oil and let the olive oil warm up before pouring in the batter.
- When the edges look dry and bubbles appear, turn the pancakes over. Cook for 1 to 2 minutes until lightly browned.
- Serve with fresh fruit and maple syrup if desired.
