Apple pie for breakfast?  Absolutely!  Especially if its been reincarnated into this healthy skillet apple pie pancake.

Apples are a terrific fruit to use in a lot of recipes, they are budget friendly, readily available and highly nutritious.    There may be some truth to the old saying “an apple a day keeps the doctor away”.

Apples are indeed loaded with health benefits:

  • Contains pectin, a natural fiber found in plants that may help lower cholesterol and blood pressure
  • Fiber also aids digestion and promotes regularity
  • High in vitamin C to support a healthy immune system

In this recipe, apples are caramelized with a touch of butter and brown sugar.  As for the pancake batter, there’s a quarter cup of flax seeds hidden for an extra boost of nutrition.  Flax seeds are loaded with omega-3 fatty acids, fiber, protein and potassium.

Cooking tips:

  • Don’t peel the apples: Most of the nutrients and vitamins are found in the skin of the apple, so save work and nutrients by not peeling them!
  • Make it for a crowd: this recipe is easily scaled up.  You can make it with a larger cast iron skillet or baking tray.  Save time by not having to flip pancakes.
