Skillet Apple Pie Pancake

Caramelized apples with the warm scent of cinnamon, nutmeg and vanilla intertwine in this delectable apple pie pancake. Made in a skillet then baked in the oven, no flipping required.

Ingredients
  

  • 1 tablespoon unsalted butter
  • 2 apples diced, peel on
  • 1 tablespoon brown sugar to be sautéed with apples
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Pinch of nutmeg
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/4 ground flax seeds
  • 1 tablespoon brown sugar to go in the batter
  • 1 teaspoon Baking powder

Instructions
 

  • On medium heat, in a 10" cast iron skillet, sauté apples, butter and 1 tablespoon brown sugar until apples are soft. About 7 to 10 minutes. Remove apples from the skillet and place in a bowl.
  • While apples are cooking, in a medium bowl, add milk, eggs, vanilla extract, cinnamon, nutmeg, salt. Whisk to combine.
  • In the same bowl, add all-purpose flour, ground flax seeds, 1 tablespoon brown sugar and baking powder. Whisk to combine.
  • Pour batter in skillet. Put apples on top of the batter, distributing them evenly.
  • Bake in oven at 375°F or 190°C for about 20 minutes or until toothpick inserted comes out clean.
