Sweet Potato Flax Seed Waffles

Crispy on the outside and soft on the inside.  These waffles are made with sweet potatoes and flax seeds to add an extra boost of nutrition to your breakfast.

Waffles are a favorite  breakfast for my kids and a good opportunity to add an extra boost of nutrition to their meal.  The school mornings are rushed so they usually don’t have time to eat any vegetables or fruit.  So why not add them into the waffle itself? 

Sweet potatoes are delicious and yet packed with vitamin B5, riboflavin, niacin, thamin and carotenoids.  They add a sweetness to the waffles so you can use less sugar.  I also add some flax seeds which are loaded with omega-3 fatty acids, fiber, protein and potassium.  They are such a terrific super food to add in a lot of dishes because you usually don’t notice the difference in taste or texture.  I also add them in muffins, breads, pizza dough and even smoothies.

These waffles taste great reheated.  Most of the time I make a double batch and then put them in the air fryer or oven  for a quick breakfast or snack. I like to heat my waffles up in the air fryer at 190°C for 4 minutes.  They’ll be nice and crispy on the outside but still soft on the inside.

Best part is, no one will know they ate sweet potatoes and flax seeds!

Ingredients
  

  • 3/4 cup cooked sweet potatoes
  • 1 cup milk
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/4 cup cup ground flax seeds
  • 3 tablespoons brown sugar
  • 1 teaspoon  baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat waffle maker.  Brush with oil.
  • In a blender combine sweet potatoes, milk and eggs. Blend until smooth.
    3/4 cup cooked sweet potatoes, 1 cup milk, 2 eggs
  • Add remaining ingredients. Blend to combine.
    1 cup all-purpose flour, 1/4 cup cup ground flax seeds, 3 tablespoons brown sugar, 1 teaspoon  baking powder, 1 teaspoon salt, 1 teaspoon cinnamon, 1 pinch nutmeg, 1 teaspoon vanilla extract
  • Pour batter onto preheated waffle maker and cook until lightly browned and crispy. Approximately 5 to 6 minutes.
  • Serve with maple syrup or agave syrup if desired.
  • Store leftovers in the refrigerator and reheat in the air fryer or oven.  They will last 3 to 4 days in the fridge.
