Preheat waffle maker. Brush with oil.
In a blender combine sweet potatoes, milk and eggs. Blend until smooth.
3/4 cup cooked sweet potatoes, 1 cup milk, 2 eggs
Add remaining ingredients. Blend to combine.
1 cup all-purpose flour, 1/4 cup cup ground flax seeds, 3 tablespoons brown sugar, 1 teaspoon baking powder, 1 teaspoon salt, 1 teaspoon cinnamon, 1 pinch nutmeg, 1 teaspoon vanilla extract
Pour batter onto preheated waffle maker and cook until lightly browned and crispy. Approximately 5 to 6 minutes.
Serve with maple syrup or agave syrup if desired.
Store leftovers in the refrigerator and reheat in the air fryer or oven. They will last 3 to 4 days in the fridge.
