Mini Cauliflower Pancakes

These cauliflower pancakes are light, fluffy and slightly sweetened with maple syrup. Not only are they made with one full cup of cauliflower, they are also made with yogurt, egg and whole wheat flour. So you get your veg, dairy, protein and whole grains all in one delicious pancake. Talk about a wholesome breakfast!

  • High-powered blender

Ingredients
  

  • 1 cup cauliflower chopped and steamed
  • 1/2 cup yogurt
  • 4 tablespoons milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 tablespoons maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup whole wheat flour

Instructions
 

  • Chop cauliflower and steam until soft.
  • In a high powered blender, blend cauliflower and yogurt until smooth.
  • Add remaining ingredients in the blender and pulse just enough to combine.
  • Let the batter rest for 10 minutes before cooking.
  • Cook on medium heat on a non-stick pan or griddle. Brush pan lightly with olive oil and let the olive oil warm up before pouring in the batter.
  • When the edges look dry and bubbles appear, turn the pancakes over. Cook for 1 to 2 minutes until lightly browned.
  • Serve with fresh fruit and maple syrup if desired.
