Yesterday night after the kids were in bed, I found myself with a sugar craving that just could not be ignored. One of those cravings that fresh fruit couldn’t solve. I looked around my cupboards but couldn’t find anything dessert like. Not even a cookie in sight. After some more searching I hit the jackpot. My kid’s old Halloween candy! I had some gummy bears, some chocolates, some gummy burgers and then some more chocolates. Needless to say, I didn’t feel so good after eating all that junk!
I thought to myself, I better make a batch of these coconut date energy balls tomorrow in case my sweet tooth strikes again. Or I’d have another night of gorging on old Halloween candy!
Luckily, these coconut energy balls are super fast to make. You just need 5 ingredients and 15 mins!
What you need to make coconut date energy balls
- Mixed nuts: Nuts are filled with heatlhy fats that will keep you full. Also high in protein, vitamins and minerals. I used a mix of almonds, cashews, pistachios. But you can use any nuts you like or have on hand.
- Dates: Naturally sweet and chewy. They are high in fiber and also contain potassium, magnesium, copper, manganese, iron and vitamin B6.
- Vanilla extract: Gives it a scent of vanilla and enhances the flavours.
- Salt: Also brings out the flavours.
Good times to enjoy these energy balls
- Eat them for breakfast. The nuts will help keep you full all morning.
- Enjoy them with coffee or tea in the afternoon when you need a pick-me-up.
- Have them as dessert after dinner.
- Eat them as a late night snack when you need something to nibble on.

Coconut Date Energy Balls
Ingredients
- 1 and 1/2 cups dried dates pitted
- 1 and 1/2 mixed nuts Use any nuts you like or have on hand. I used a mix of almonds, cashews and pistachios.
- Pinch of salt Not necessary if your nuts are already salted.
- 1 tsp vanilla extract
- 1/4 cup of desiccated coconut
Instructions
- Put dates, nuts, salt (if your nuts are not salted) and vanilla extract in the food processor. Blend on high until it forms a paste.
- Roll the mixture into balls and roll them in the desiccated coconut.
- Store in the refridgerator for up to one week. Enjoy!
