Coconut Date Energy Balls

These coconut date energy balls are the perfect snack for when hunger strikes and you need something to tie you over to your next meal. They're also perfect for those sugar cravings that happen but you want to satisfy it with something healthy instead of junk!

Ingredients
  

  • 1 and 1/2 cups dried dates pitted
  • 1 and 1/2 mixed nuts Use any nuts you like or have on hand. I used a mix of almonds, cashews and pistachios.
  • Pinch of salt Not necessary if your nuts are already salted.
  • 1 tsp vanilla extract
  • 1/4 cup of desiccated coconut

Instructions
 

  • Put dates, nuts, salt (if your nuts are not salted) and vanilla extract in the food processor. Blend on high until it forms a paste.
  • Roll the mixture into balls and roll them in the desiccated coconut.
  • Store in the refridgerator for up to one week. Enjoy!
