I consider oatmeal raisin cookies to already be one of the healthier cookie options. There’s already oats and raisins so instantly healthier right?
In this recipe, we boost the nutrition up even more with flax seeds and carrots. Why carrots? These days kids (and adults too) are spending more time on electronic devices and we really need to take care of our eyes. Carrots are rich in beta-carotene which the body changes to vitamin A which is very important for eye health.
Plus, there’s no oil or butter in this recipe and just 2 tablespoons of agave syrup or your sweetener of choice.

Super Healthy Oatmeal Raisin Cookies
Ingredients
- 1 1/2 cup rolled oats
- 1/4 cup all-purpose flour
- 1/4 cup flax seeds
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 ripe banana
- 1 egg
- 1 tablespoons agave syrup or sweetener of choice
- 1 teaspoon vanilla extract
- 1/4 cup raisins
- 1 small carrot grated
Instructions
- In a medium-sized bowl, mix rolled oats, all-purpose flour, flax seeds, baking soda, cinnamon and salt.1 1/2 cup rolled oats, 1/4 cup all-purpose flour, 1/4 cup flax seeds, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1 teaspoon salt
- In another bowl, mash banana then add egg, agave syrup, vanilla extract and whisk together.1 ripe banana, 1 egg, 1 tablespoons agave syrup, 1 teaspoon vanilla extract
- Combine wet and dry ingredients in one bowl and mix.
- Add raisins and carrots and mix.1/4 cup raisins, 1 small carrot grated
- Preheat oven to 350°F (177°C).
- Line baking trays with a silicone baking mat or parchment paper.
- Scoop approximately 1 1/2 tablespoon of cookie dough for each cookie on the baking mat. Flatten into cookie shapes.
- Bake for 15 minutes until lightly browned.
- Store in an airtight container for 3 to 4 days.
