Lower the Bad Cholesterol Guacamole

This guacamole recipe is easy, fresh and delicious.  It’ll be your favourite side-kick for everything from chips, nachos, quesadillas or even sandwiches!  Not only does it taste good, but its also good for you.  Did you know that eating guacamole can help you lower LDL (bad) cholesterol?

I LOVE guacamole and that’s an understatement.  It makes everything taste better.  Nothing like the rich creaminess of avocados with tomatoes, onions, lime, jalapenos, salt and pepper.  But if you’re ever short on time, a simple guacamole of mashed avocado with a squeeze of lime, salt and pepper is delicious.  If you’re really short on time, even a mashed avocado with nothing will do nicely.

The main star of guacamole is certainly the avocados which are also so good for your health!

Eating avocados can serve up a ton of health benefits:

  • Rich in monounsaturated fats (“good fats”) that help lower LDL cholesterol (“bad cholesterol”)
  • High in fiber to keep you feel satiated longer
  • Source of potassium, folate, vitamin C, E, B5, K, niacin
  • Sugar free! 
  • Good for the skin because vitamin C helps your body produce more collagen

How do you choose a ripe avocado?

Press the avocado gently.  A ripe avocado should have a little bit of give but not be too soft.  If its hard, then its not ripe yet.  If its too soft, then it might be overripe and brown.  If you open an avocado and its brown, its still edible, but the colour doesn’t make it too appetizing.  But don’t throw it out right away! You can use overripe avocados to replace some of the oil in baked goods.  Or throw it in a chocolate smoothie, that way you won’t mind the brown colour since chocolate is supposed to be brown anyways!

How do you store guacamole?

If you have leftover guacamole (I usually just eat it all!),  the best way to prevent it from turning brown so fast is to put it in a container, then put plastic wrap directly on top of it.  Next, put the lid on to minimize the oxidation process.  This helps it keep better in the fridge for an extra couple of days.

Ingredients
  

  • 2 large avocados or 3 small avocadoes ripe
  • 2 tablespoon diced tomatoes seeds removed
  • 2 tablespoon cilantro chopped
  • 1 clove garlic minced
  • 1 tablespoon red onion finely diced
  • 1 green jalapeno seeds removed and finely diced (optional, add it if you like a little spice!)
  • 1 tablespoon lime juice
  • Pinch of salt
  • Pinch of pepper

Instructions
 

  • Slice avocado in half and remove the seed. Scoop out the flesh into a bowl and mash until it’s the consistency you like eg. chunky or smooth.
  • Add the tomatoes, cilantro, garlic, red onion, jalapeno, lime juice, salt and pepper.
  • Taste and adjust the seasonings to your liking. I always end up adding more lime, salt and pepper.
