Honey Yogurt Blueberry Muffins

Nothing beats a classic blueberry muffin, but often muffins can be loaded with unhealthy fats and sugars.  These honey yogurt blueberry muffins take a classic and put a healthy spin on it, using wholesome ingredients like whole wheat flour, flax seeds, honey, olive oil and yogurt.

Muffins are mostly thought of as a breakfast food, but a lot of times I look at the ingredients for some recipes and think, its not too far from having a cupcake (minus the frosting)!  Why don’t I just eat a cupcake for breakfast instead? 

To make muffin recipes healthier, there’s some simple swaps you can make

  • Whole wheat flour instead of white flour:  Whole wheat flour contains more nutrients and fiber versus white flour.  There’s more protein, calcium, iron and potassium in whole wheat flour too.
  • Olive oil instead of butter: Olive oil is a healthy fat with many benefits such as reducing blood pressure, improving cholesterol levels, improving heart health and brain function.
  • Honey instead of sugar: Honey contains trace amounts of essential vitamins and minerals such as potassium, calcium, zinc and vitamins C, B1, B2, B3 and B6.  It also has a lower glycemic index than sugar, meaning that it won’t give it you a sugar spike followed by a crash.

Add-ins to super charge the nutrition of muffins

Flax seeds:  I love adding flax seeds to baked goods because I don’t find they change the texture much and they are loaded with health benefits.  They are packed with heart healthy omega-3 fatty acids, high in fiber and protein, and also a good source of vitamins and minerals such as thiamine, copper, molybdenum, magnesium and phosphorus.

Yogurt:  Yogurt helps keep the muffins moist and is also a  good source of protein and calcium, essential for healthy teeth and bones.  It also contains probiotics to help boost digestive health. 

What if I don’t like the texture of baked goods using whole wheat?

You can try the recipe with 50% whole wheat flour and 50% white flour.  You might have to add a few tablespoons more white flour because whole wheat flour tends to soak up more of the liquids in the recipe.  As your taste adjusts to the texture of whole wheat, the next time you can add 75% whole wheat flour and then 100% after that.

How do you make honey yogurt blueberry muffins?

  1. Whisk dry ingredients in a large bowl.
  2. Whisk wet ingredients in another large bowl.
  3. Add the dry ingredients to the wet ingredients.  Gently fold to combine.
  4. Distribute batter into muffin cups.
  5. Optional: drizzle with honey if you want extra sweetness.  Add in some chopped nuts for extra protein.
  6. Bake and enjoy!

Ingredients
  

  • 1 and 1/2 cups whole wheat flour
  • 1/2 cup flax seed meal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup honey
  • 1/2 cup yogurt
  • 1/4 cup skim milk
  • 4 tablespoons olive oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions
 

  • Preheat oven to 385 °F or 196 °C.
  • In a large bowl, whisk together whole wheat flour, flax seed meal, baking powder, baking soda and salt.
  • In another large bowl, whisk together honey, yogurt, skim milk, olive oil, egg and vanilla extract.
  • Add the dry ingredients to the wet ingredients and gently fold to combine. Dough will be sticky from the honey.
  • Gently fold in the blueberries.
  • Distribute batter into silicone muffin cups or lined muffin pans.
  • If you need a little extra sweetness, drizzle some honey on top of the muffins. You can also add in some chopped nuts for extra protein.
  • Bake for 20 minutes or until a toothpick comes out clean. Remove from the oven and let cool.
