Honey Yogurt Blueberry Muffins
Nothing beats a classic blueberry muffin, but often muffins can be loaded with unhealthy fats and sugars. These honey yogurt blueberry muffins take a classic and put a healthy spin on it, using wholesome ingredients like whole wheat flour, flax seeds, honey, olive oil and yogurt.

1 and 1/2 cups whole wheat flour 1/2 cup flax seed meal 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/4 cup honey 1/2 cup yogurt 1/4 cup skim milk 4 tablespoons olive oil 1 large egg 1 teaspoon vanilla extract 1 cup blueberries
Preheat oven to 385 °F or 196 °C.
In a large bowl, whisk together whole wheat flour, flax seed meal, baking powder, baking soda and salt.
In another large bowl, whisk together honey, yogurt, skim milk, olive oil, egg and vanilla extract.
Add the dry ingredients to the wet ingredients and gently fold to combine. Dough will be sticky from the honey.
Gently fold in the blueberries.
Distribute batter into silicone muffin cups or lined muffin pans.
If you need a little extra sweetness, drizzle some honey on top of the muffins. You can also add in some chopped nuts for extra protein.
Bake for 20 minutes or until a toothpick comes out clean. Remove from the oven and let cool.
