There’s something about eating this banana raisin baked oats for breakfast. With its cake-like texture and chewy sweet raisins, the kids feel like they are having a treat for breakfast. And I feel super happy that they are eating something very nutritious.

With no oil or butter, this recipe is more “skinny” than the typical muffin or banana bread recipe. Also, if your bananas are very ripe, you can add even less maple syrup than the recipe calls for.
I also add some flax seeds which are loaded with omega-3 fatty acids, fiber, protein and potassium. They are such a terrific super food to add in a lot of dishes because you usually don’t notice the difference in taste or texture.

Banana Raisin Baked Oats

Ingredients
- 3 cup rolled oats
- 1/4 cup flax seeds
- 3 ripe bananas
- 3 eggs
- 11/2 cup oat milk or milk
- 4 tablespoons maple syrup
- 3 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup raisins
Instructions
- Preheat oven to 375°F. 190°C.
- In a blender, pulse rolled oats into a flour-like consistency.
- Add remaining ingredients except raisins and blend until smooth.
- Stir in raisins.
- Grease a baking tray and pour the mixture in.
- Bake for 35 to 45 minutes until slightly brown on top and a toothpick comes out clean.
- Cut into squares and store in an airtight container for 3 to 4 days.
