Skillet Apple Pie Pancake
Ingredients
- 1 tablespoon unsalted butter
- 2 apples diced, peel on
- 1 tablespoon brown sugar to be sautéed with apples
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- Pinch of nutmeg
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/4 ground flax seeds
- 1 tablespoon brown sugar to go in the batter
- 1 teaspoon Baking powder
Instructions
- On medium heat, in a 10″ cast iron skillet, sauté apples, butter and 1 tablespoon brown sugar until apples are soft. About 7 to 10 minutes. Remove apples from the skillet and place in a bowl.
- While apples are cooking, in a medium bowl, add milk, eggs, vanilla extract, cinnamon, nutmeg, salt. Whisk to combine.
- In the same bowl, add all-purpose flour, ground flax seeds, 1 tablespoon brown sugar and baking powder. Whisk to combine.
- Pour batter in skillet. Put apples on top of the batter, distributing them evenly.
- Bake in oven at 375°F or 190°C for about 20 minutes or until toothpick inserted comes out clean.
