This healthy plant-based lentil stew uses red lentils which are terrific for stews. Red lentils breakdown while cooking to give the stew a creamy, hearty texture. There’s no need to add any cream or coconut milk and yet you’ll have an unbelievably rich stew.

The medley of herbs and spices in this recipe are really what makes the stew shine. Thyme and bay leaves give it a warm , herbal aroma. While cumin gives it a deep earthy flavour and cayenne pepper for a bit of a spicy kick.
What you need to make this vegan lentil stew
- Garlic and onion
- Carrot, celery, potatoes
- Red lentils
- Spices: cumin and cayenne pepper
- Herbs: thyme and bay leaves
- Can of crushed tomatoes
- Vegetable stock

Vegan Lentil Stew
Ingredients
- 1 tablespoon olive oil
- Half an onion diced
- 2 carrots diced
- 2 stalks celery diced
- 3 cloves of garlic minced
- 3/4 cup red lentils
- 1/2 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1 sprig of thyme
- 2 bay leaves
- 1 can 450ml crushed tomatoes
- 3 cups vegetable stock
- 1 potato diced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and sauté for 2-3 minutes.
- Add carrots, celery and garlic and sauté for another 2-3 minutes.
- Add lentils, cumin, cayenne pepper, thyme, bay leaves, crushed tomatoes and vegetable stock. Bring to a boil and simmer for 5 mins.
- Add the potatoes. Simmer for around 25 minutes, stirring occasionally, until vegetables are soft.
- Taste and adjust the seasoning to your liking eg. More salt, pepper, cumin or cayenne pepper.
