Vegan Lentil Stew
A hearty vegan lentil stew, packed with plant protein and a medley of vegetables, herbs and spices. A nourishing hot stew to warm the soul on a cold day.

- 1 tablespoon olive oil
- Half an onion diced
- 2 carrots diced
- 2 stalks celery diced
- 3 cloves of garlic minced
- 3/4 cup red lentils
- 1/2 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1 sprig of thyme
- 2 bay leaves
- 1 can 450ml crushed tomatoes
- 3 cups vegetable stock
- 1 potato diced
- Salt and pepper to taste
Heat olive oil in a large pot over medium heat. Add onions and sauté for 2-3 minutes.
Add carrots, celery and garlic and sauté for another 2-3 minutes.
Add lentils, cumin, cayenne pepper, thyme, bay leaves, crushed tomatoes and vegetable stock. Bring to a boil and simmer for 5 mins.
Add the potatoes. Simmer for around 25 minutes, stirring occasionally, until vegetables are soft.
Taste and adjust the seasoning to your liking eg. More salt, pepper, cumin or cayenne pepper.
