This smashed chickpea and avocado toast is creamy, fresh and filling. Its one of my favourite ways to eat chickpeas. I always feel satisfied after eating this because its extremely tasty and flavourful. Also, because its so healthy, I feel like I treated my body with a nourishing meal that will fuel me for the rest of the day or at least until the next meal!
Here’s everything you need to make this amazing chickpea and avocado toast:
- Chickpeas – I use canned for convenience.
- Avocado – For the delicious creaminess!
- Dijon mustard – Adds tangy flavour with a hint of spice.
- Mayonnaise – For extra creaminess, sweetness and tang. Make it vegan with vegan mayonnaise.
- Garlic powder -Adds a savory dimension.
- Salt, pepper – Brings together all the great flavours.

Smashed Chickpea Avocado Toast
Ingredients
- 1 can 450g chickpeas
- 1 ripe avocado
- 1 tablespoon lemon juice
- 1/2 tablespoon Dijon mustard
- 1 tablespoon mayonnaise or vegan mayonnaise
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 slices whole wheat bread
- 4 lettuce leaves or other toppings such as sliced tomatoes cucumbers or sprouts
Instructions
- Rinse and drain chickpeas.
- In a medium bowl, add chickpeas, avocado, lemon juice, mustard, mayonnaise, garlic powder, salt and pepper. Use a fork or a potato masher to mash it together, but leave it a little chunky for texture.
- Taste and see if it needs more salt, pepper or lemon juice.
- Wash lettuce leaves and toast bread.
- Put lettuce on top of your toast and then spread the chickpea avocado mixture. Or assemble a sandwich with chickpea avocado mixture and your choice of sandwich toppings.
