Smashed Chickpea Avocado Toast

Ingredients
  

  • 1 can 450g chickpeas
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • 1/2 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise or vegan mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 slices whole wheat bread
  • 4 lettuce leaves or other toppings such as sliced tomatoes cucumbers or sprouts

Instructions
 

  • Rinse and drain chickpeas.
  • In a medium bowl, add chickpeas, avocado, lemon juice, mustard, mayonnaise, garlic powder, salt and pepper. Use a fork or a potato masher to mash it together, but leave it a little chunky for texture.
  • Taste and see if it needs more salt, pepper or lemon juice.
  • Wash lettuce leaves and toast bread.
  • Put lettuce on top of your toast and then spread the chickpea avocado mixture. Or assemble a sandwich with chickpea avocado mixture and your choice of sandwich toppings.
