These homemade cheese rolls are soft, fluffy and cheesy. They also pack a nutritious punch, made with one full package of tofu and 1/4 cup flax seeds – hidden healthy ingredients that no one will even know are in there!
Have you ever thought of baking with tofu? Lately, I’ve been experimenting with tofu in muffins, cheesecakes, frittatas, pasta sauces and now bread. Hiding it in recipes to be exact. Tofu has a such a mild flavour that it has trouble being the star of the show sometimes. It takes a lot of seasonings to make it delicious. This in fact makes it a perfect nutritious food to hide in an assortment of recipes.
Take these homemade soft cheese rolls, there’s a whole package of tofu in it, but you don’t taste it at all in the final product. The tofu in this recipe, replaces the butter you would normally find in a dinner roll recipe. One package of soft tofu is only around 125 calories, whereas a quarter cup of butter is around 400 calories!

Equipment
- Stand mixer Or can knead by hand
Ingredients
- 1 package 350g of soft tofu
- 3 cups of all-purpose flour
- 1/4 cup ground flax seeds
- 1 tablespoon yeast
- 3 tablespoon sugar
- 1 and 1/2 teaspoon salt
- 1/2 cup whole milk 110 °F or 43 °C
- 1 and 1/2 cup shredded cheddar cheese kneaded in the dough
- 1/4 cup shredded cheddar cheese for topping the buns
- Olive oil for greasing the baking tray and for brushing on top of buns
Instructions
- In a stand mixer fitted with the dough hook, add tofu, all-purpose flour, ground flax seeds, yeast, sugar and salt.
- Warm milk to 110 °F or 43 °C. Turn on mixer and slowly add warm milk.
- Knead dough until it forms a ball. If the dough is too sticky add flour one tablespoon at a time.
- Add cheddar cheese and knead the dough until the cheese is incorporated.
- Take the dough out and cut it into 9 equal parts.
- Shape each piece into a smooth ball.
- Brush olive oil onto a 8’x8′ baking tray and put the dough balls in.
- Cover with plastic wrap and let rise for 90 minutes. The dough should be doubled in size.
- Take the plastic wrap off. Brush with olive oil and top with cheddar cheese.
- Preheat oven to 375°F or 190°C. Bake for 20 to 25 minutes.
