Pesto Tuna Meatball Subs
Pesto tuna meatballs subs are a lighter, fresher take on your traditional meatball sub. They're packed with healthy omega-3 fatty acids and only take 30 minutes to make!

- 1 can tuna 185g
- 1 tablespoons of pesto store bought or home made
- 2 tablespoons of breadcrumbs
- 1 tablespoon of mayonnaise
- 1 egg
- Squeeze of lemon juice
- Pinch of black pepper
- 3 small sub rolls this recipe makes 6 meatballs, 2 meatballs per roll
- Sub topping ideas: mayonnaise pesto, cheese, avocado, lettuce, tomatoes, sprouts
Drain tuna. In a small bowl, flake canned tuna with a fork.
Add pesto, breadcrumbs, mayonnaise, egg, lemon juice and black pepper. Mix.
If meatballs are too soft, add more breadcrumbs, a tablespoon at a time. If meatballs are too dry, you can add more mayonnaise.
Form 6 meatballs and place on a silicone baking sheet or parchment lined baking tray.
Bake for around 10 minutes at 400°F or 204°C until meatballs are browned.
Spread mayonnaise on one side of the sub roll and pesto on the other side of the sub roll. Fill with tuna meatballs and toppings like cheese, avocado, lettuce, tomatoes or sprouts.
