Falafel Burgers with a Yogurt Dill Sauce

Ingredients
  

For the falafel patty

  • 1 can 450g chickpeas drained and rinsed
  • 1 tablespoon tahini
  • 1 garlic clove
  • 1/8 onion
  • 1 bunch cilantro
  • Squeeze of lemon juice
  • Pinch of cumin
  • Pinch of salt and pepper

For the yogurt dill sauce

  • 1/2 cup Greek yogurt
  • 1 garlic clove finely minced
  • 1 tablespoon dill chopped
  • Pinch of salt and pepper
  • 1 tablespoon nutritional yeast *optional

Other

  • 3 brioche buns
  • 1 ripe avocado
  • Squeeze of lemon juice
  • Salt and pepper
  • 12 cucumber slices

Instructions
 

For the falafel patty

  • Put all the ingredients in the food processor and pulse until finely chopped.
  • Scoop the ingredients into a bowl and form into patties.
  • In a large pan, heat 1 tablespoon of olive oil on medium heat. Pan fry the patties until golden brown on each side.

For the yogurt dill sauce

  • In a small bowl stir all the ingredients together.

To assemble the burger

  • Toast the brioche buns.
  • Mash the avocado with lemon juice, salt and pepper. Spread it on the bottom of the buns.
  • Next, add the falafel patty. Top with yogurt dill sauce and cucumbers. Enjoy!
